Herbal Eggs / Iron Eggs

I love herbal eggs a lot. Love the herbs but the herbs taste of the herbal eggs selling in shops are too blunt. Therefore, I decided to try making it myself. I encounter a webpage making iron eggs. Iron eggs are the delicacy in Taiwan. I love to eat that too, thus decided to try that out. I can't remember the webpage though.

The recipe:-

2 packet of quails eggs
6 chicken eggs
6 cups of black tea (I used good grade of Pu Er)
4 tbsp thick soy sauce (I used A4 brand)
6 tbsp soy sauce (I used Lee Kum Kei)
50g rock sugar

Herbs
2 Star Anise
3 pieces liquorice
1 piece of tangerine peel
1 piece of cinnamon bark (3 cm long)
7 cloves
2 pieces of dong gui

Cooking Steps
  1. Put in eggs into a pot of tap water/
  2. Boiled eggs with low fire. After it is cooked, put in cold water. Peeled them after a minute or two
  3. While the eggs is being boiled, prepare tea. 
  4. Mix all the herbs, rock sugar, soy sauce and thick soy sauce into the tea.
  5. Put in the eggs into the mixture and boiled it with high fire.
  6. After it is boiling, put it to low fire and simmer for ten minutes.
Let the eggs sit in the tea mixture for a day or two (simmer it once or twice in a day)

If you would like to prepare iron eggs, after number 6, cooled eggs under electric fan. Then repeat number 5 & 6 for ten times.
